This Sidama G1 Natural lot from Daye Bensa showcases the exceptional quality and distinct character of Ethiopia’s renowned Sidama region. Sourced from carefully selected smallholder farmers in the highland areas of Sidama Bensa, cherries for this lot are grown at elevations ranging between 1,900 and 2,200 meters above sea level. The high altitude, rich soil, and cool microclimate allow for slow cherry maturation, enhancing sweetness, density, and flavour complexity.
Cherries are hand-picked at peak ripeness and undergo meticulous sorting to ensure only the highest-quality fruit is processed. The natural process involves drying the whole cherries on raised African beds under carefully controlled conditions. Throughout the drying period, the coffee is regularly turned to ensure even drying and prevent over-fermentation. Once dried to the optimal moisture level, the coffee is rested and later hulled, sorted, and graded.
